Vitamin C, phenolics and glucosinolates were investigated in several root vegetables; turnip, parsnip, kohlrabi, Swedish turnip, and long-rooted radish. The content of vitamin C was relatively high, and ranged from 12 to 42 mg/100 g fresh weight (FW). Storage had only minor effect in the content of glucosinolates and total phenolics, whereas harvest date (age of the plant) had major effects on their concentrations. These root vegetables may be interesting for development of healthy convenient food products.
